The beans
60% washed Ethiopia (Guji), 40% Colombia (Huila). Both bought direct from farms we visit.
The roast
Medium. Developed enough for espresso, light enough that the fruit survives. Roasted on a 15 kg Probat.
Grind
Whole bean, or ground for espresso, stovetop, plunger, pour-over or Aeropress. Choose at checkout.
Resting and storage
Rest three days after roast. Drink inside a month. Keep the bag sealed, out of the fridge.
